The Americans and the Spanish are fond of sheep cheese, more even than the Dutch. This is one of the reasons we have this beautiful sheep cheese in our range. Besides this the continuation of preparing this sheep cheese, we are also able to keep this beautiful sheep race in Friesland (North of Holland). The taste is a bit nutty One can eat this cheese already as from 2 weeks age until over 12 months of ripening. We usually offer them in the range of 3-5 months aging, but also older. This cheese can be served along with the aperitive or after dinner with red fruit and almonds.
