Jersey cow cheese – Torba Casa
The Jersey Torba Casa cheese is made from fresh, full-bodied organic jersey milk and a starter culture from northern Italy. This cheese is the result of Dutch cheese science, combined with the typical taste of Mediterranean cheeses. A cheese with a light Parmesan flavour and an unmistakable Italian character!
The cheese is creamy and has small calcium crystals here and there.
As its name implies, the Jersey was bred on the British Channel Island of Jersey. It apparently descended from cattle stock brought over from the nearby Norman mainland, and was first recorded as a separate breed around 1700.
The breed was isolated from outside influence for over two hundred years, from 1789 to 2008.
The milk contains high butterfat conditions, 4.84% butterfat and 3.95% protein. Furthermore Jersey cows have the ability to thrive on locally produced food.
